KENOLA
(The nutritious, tasty, easy, inexpensive, convenient, portable breakfast; ‘nuf said?)
THIS one is probably my ALL-TIME favorite. I eat it EVERY morning of my life. It provides a lot of stuff your body needs, I think, including fibre.

Melt in a Pan:
½ pound butter (NOT margarine
2 cups honey (750 grams)


Mix in a Turkey Roaster:
8 cups oatmeal
2 cups wheat bran
2 cups oat bran
2 cups wheat germ
4 cups (400 gm) unsweetened, shredded coconut (short pieces)
3 cups (300 gm) sunflower seed (unsalted)
3 cups (300 gm) slivered or sliced almonds
1 cup finely ground flaxseed


Pour the melted ingredients over the dry, mix well and bake, uncovered for 15 minutes at 300F. Stir and bake another 15 minutes; stir and bake another 15 minutes

When cooled, break up any lumps. Store in sealed jars. Freeze for longer keeping.

Optional: When cool, you may add a cup of Lecithin ("brain food")

Serve for breakfast with milk like any other cereal.

For Squares:
When cool, add 4 cups peanuts to the baked mix and add 1 ½ cups chocolate chips. In a pan, melt ½ pound butter with 1 ½ bag (375 gm) marshmellows. When smooth, add this to half of the Kenola. Mix well and press into 2 large, rectangular cake pans, lined with wax paper. When this is cool and hardened, melt another ½ pound butter with another 1 ½ bag of marshmellows and do the other half of the Kenola. For awhile, the bars will be sticky, but will dry and harden for some time. These keep well.

NOTE: Health tip: If you are concerned about lowering your cholesterol, concentrate on the "soluble fibre" like the oat bran. If you are concerned about "keeping regular", concentrate on the "un-soluble fibre" like the wheat bran.

FOR SQUARES/BARS:
add 4 cups peanuts to the dry mixture. To the cooled Kenola, add 1 ½ cups chocolate (or carob) chips.

Divide the cooled Kenola into 2 equal portions. In a pan, melt ½ lb. butter with one bag (250 gm) marshmallows. When smooth, add this to one of the portions. Mix well and press into 2 large rectangular cake pans, lined with wax paper. When this is cool and set, melt another ½ lb. of butter with another 250 gm bag of marshmallows for the other portion and repeat. Real chocolate chips will mostly melt. If the bars seem sticky, no problem. They will stiffen and dry for some time.
